SUMMER IS HERE! In this class we'll make a simple grilled skirt steak ( NO grill required!) and a versatile pesto pasta salad that's a perfect side dish for summer cookouts. It also makes a great lunch or dinner on its own! If you've never tried your hand at homemade pesto - or are nervous about cooking steak at home- this is the class for you! [email protected] ingredients in this recipe: kosher salt black pepper 3/4 cup olive oil red wine vinegar 5 garlic cloves Dijon mustard 1/2 cup freshly grated Parmesan cheese 1/4 cup pine nuts 2 firm-ripe avocados 1 pound cut pasta, such as penne or fusilli 2 cups baby arugula 2 lemons 3 cups fresh basil leaves, packed 1/2 cup fresh mint leaves, packed 2 pounds skirt steak Equipment: food processor or Vitamix mixing bowls cutting board chef's knife measuring cups and spoons liquid measuring cup grill, grill pan, or large cast-iron skillet tongs colander large baking dish for marinating meat whisk or fork reamer for juicing lemons (optional)
