I am so excited for this class! This is one of my favorite pastas to make when eggplant and tomatoes are in season in the summer. It's inspired by Sicilan caponata made with stewed eggplant and tomatoes, pine nuts, and raisins. It's a little sweet and a little bit spicy, thanks to crushed red pepper flakes. This pasta makes a wonderful main course, or a perfect side to grilled fish or meats. It can easily be made vegetarian and vegan, and is also dairy-free! I can't wait to make it with you!!
