With lazy summer days waning, I wanted to share a fun recipe that would get everyone excited to be back in the kitchen this fall! This chicken parm is one of my favorite dinners to make when I want something comforting. And because the chicken is lightly breaded and cooked in a skillet ( instead of deep fried) it's a lighter take on Chicken Parm, too. I like to serve it with simply roasted broccoli or broccolini, and of course, plenty of red wine!
