Ribollita is a rustic white bean Italian soup. Traditionally it's stale bread is added to the soup and then it's baked after being cooked and the bread formed croutons on top. However my take is making the soup in the instant pot and making soft savory scones to go along with it. There is a gluten free recipe for the scones. The soup could very easily be made vegan by omitting the bacon and using vegetable stock in place of chicken stock.
