This is one of my favorite pastas to make when eggplant and tomatoes are in season in the summer. It's inspired by Sicilan caponata made with stewed eggplant and tomatoes, pine nuts, and raisins. It's a little sweet and a little bit spicy, thanks to crushed red pepper flakes. Due to a technical issue that occurred during the recording of the live class, this video is a "re-recording" of that class.
